Moody Tongue, the world’s first brewery to earn MICHELIN Stars, has officially opened its first Florida location, Moody Tongue Sushi West Palm Beach, at the Hilton West Palm Beach. This marks the latest addition to its growing culinary portfolio.
Led by Brewmaster Jared Rouben and Executive Sushi Chef Hiromi Iwakiri, the restaurant offers a 15-course omakase experience, pairing hyper-seasonal ingredients with Moody Tongue’s innovative beers. The intimate space features a traditional 14-seat omakase counter and banquette seating, designed to reflect the textures and tones of the Moody Tongue brand while incorporating coastal-inspired elements.
The curated menu highlights specialty pairings such as Hokkaido Sea Scallop with edamame and Ossetra caviar, complemented by a Pressed Asian Pear Saison; Madai with Florida Orange zest and sea salt, paired with an Orange Blossom Belgian Blonde; and a Florida Stone Crab Hand Roll with green apple and sauce dijonnaise, served alongside a Cherry Oud Bruin.
Rouben, known for his chef-driven approach to brewing, has crafted a selection of artisanal beers specifically for the experience. Offerings include a Grapefruit Gose featuring Florida Ruby Red Grapefruit, a Shaved Black Truffle Rice Lager, and signature selections like the Yuzu Lager and Juiced Lychee IPA. The restaurant also offers a curated selection of Japanese whiskeys, wines, and sakes. In addition, Rouben created the exclusive West Palm Beach Pilsner, available only at Hilton West Palm Beach dining outlets.
Moody Tongue’s expansion into West Palm Beach follows the success of its recent South Florida pop-ups. “We’re excited to establish a permanent presence in West Palm Beach and share our approach to beer pairings and exceptional cuisine,” said Moody Tongue CEO Jeremy Cohn. Rouben echoed the enthusiasm, emphasizing the fusion of brewing and culinary artistry in this new concept.

Moody Tongue Sushi West Palm Beach is open Tuesday through Saturday from 5:00 to 10:00 p.m. Reservations are required via OpenTable.
