Sushi by Boū, a speakeasy-inspired omakase sushi concept known for its modern take on the dining experience, is expanding to Palm Beach County, with new locations opening in West Palm Beach and Boca Raton.
This expansion will bring the total count of Sushi by Boū locations to 14 nationally. The brand is part of the SimpleVenue portfolio, co-founded by Michael Sinensky and Erika London, and newly appointed partner and Chief Hospitality Officer, Richie Romero. The group, which also includes brands like Sushi Suite, Omakaseed, Fins and Scales, and Trust Bae, plans to add at least a dozen more locations in 2023.
SimpleVenue focuses on creating micro-restaurant concepts in underutilized spaces within existing venues. Each Sushi by Boū location features a unique, themed experience, with the West Palm Beach location, opening it’s doors today, offering a 12-seat omakase counter within Vinyl Fish Club, and a décor inspired by Palm Beach County's color palette.
Sushi by Boū offers a timed Omakase experience, where guests can enjoy a menu curated by the sushi chef. The menu options include a 12-course omakase for $60 or a 17-course omakase for $100. It features a variety of sushi delicacies, including yellowtail, spotted prawn, salmon roe, scallop, fatty tuna, BBQ eel, and their signature 'surf and turf'. Hand rolls and other sushi favorites are available upon request, as well as seasonal mochi ice cream for dessert.
Located at 340 West Clematis Street within the Vinyl Fish Club, Sushi by Boū West Palm Beach operates from 5 p.m. to 12 a.m., Tuesday through Sunday. Reservations can be made on sushibybou.com or Opentable.
