World-renowned chef and restaurateur Costas Spiliadis is bringing his celebrated estiatorio Milos to West Palm Beach on February 6. This marks the brand's second Florida location and twelfth worldwide. The restaurant will debut at One Flagler, the Class A+ office tower by Related Ross in the Flagler Waterfront District. Known for its authentic Greek cuisine and sophisticated ambiance, Milos is set to elevate the city's dining scene.
With over 45 years of culinary excellence, Spiliadis aims to immerse guests in the essence of Greek culture. The two-floor space will highlight fresh, seasonal ingredients paired with unparalleled service, reflecting Greece's natural beauty and textures.
Founded in Montreal in 1979, estiatorio Milos has become a benchmark for fine Greek dining. Known for sourcing the freshest Mediterranean seafood, along with locally inspired produce and meats, Milos is celebrated for its commitment to philoxenia—the Greek tradition of warm hospitality. The West Palm Beach location will continue this legacy, inviting guests to share dishes and savor the vibrant flavors of Greece.

The heart of the Milos experience is its stunning fish marketplace, showcasing rare and fresh seafood alongside a seasonal vegetable display. Guests can personally select their catch, which is then expertly prepared in styles ranging from sashimi to baked in sea salt. Signature dishes include the Tuna Tartare with Milos' exclusive olive oil, the Milos Special of lightly fried zucchini and eggplant with saganaki cheese, and the iconic Lobster Pasta. Dessert offerings, such as authentic Greek yogurt with thyme-infused honey and the indulgent Baklava Kaimaki, round out the menu.
The restaurant also boasts the Palm Beaches' most extensive selection of Greek wines, featuring indigenous varieties like Assyrtiko, Xinomavro, and Agiorgitiko.
Designed by Tara Bernerd & Partners, the 294-seat restaurant blends contemporary elegance with natural Greek elements. The design includes a dramatic staircase, a display kitchen, and materials like Pentelikon marble and oak, complemented by olive trees and soft, earthy tones. The second floor offers a more intimate atmosphere with a moody bar and terrace views of the Flagler waterfront.

Milos will serve as the flagship restaurant for One Flagler, a 25-story office tower combining historic significance with modern innovation. Featuring over 270,000 square feet of premium space and amenities by Equinox, the tower is poised to become a hub for top-tier firms and a premier dining destination.
